Coconut Granola Bars


I love granola bars but I tend to be so picky when it comes to store bought ones that I just find it easier to make my own! The main ingredients to make this recipe work are oats, shredded coconut, coconut oil, honey, and vanilla. All the other ingredients are just based on my preferences and can be swapped out for anything you like! You could swap out almonds for peanuts, dried cherries for raisins, pumpkin seeds for sunflower seeds, add in some chocolate chips, or drizzle the top with almond butter. You just want to have about a cup of mix ins for every 2 ½ cups of oats. Let your creative juices flow, you literally can’t go wrong!

Ingredients

  • 2 ½ cups oats

  • ¼ cup shredded coconut

  • ¼ cup chopped almonds

  • ¼ cup pumpkin seeds

  • ¼ cup dried cherries

  • 2 tbsp chia seeds

  • ⅓ cup melted coconut oil

  • ⅓ cup honey

  • 1 tsp vanilla

  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350 degrees and prepare a 9 x 9 baking pan with parchment paper and a little cooking spray.

  2. In a large bowl, combine the oats, shredded coconut, almonds, pumpkin seeds, dried cherries, and chia seeds, or whatever mix ins you prefer.

  3. In a small bowl, combine the coconut oil, honey, and vanilla.

  4. Combine the wet ingredients with the dry ingredients and mix until everything is well coated.

  5. Sprinkle the cinnamon over the top and mix again.

  6. Pour the mixture into the prepared baking sheet and press firmly into the pan.

  7. Bake at 350 degrees for 30 minutes. Let cool completely before taking out of the pan and cutting into bars.
